Pearl Tapioca

INGREDIENTS:
1/2 C pearl tapioca 4 C milk 3 eggs
3/4 t vanilla 1-2 C water 1/4 salt
1/2-3/4 C sugar



1 Soak tapioca in water 5-6 hours or overnight; drain. Mix pearls with milk and salt. Bring to boil on stove, or microwave on med-high 14-15 minutes covered (no need to stir when cooked in microwave). Beat eggs and sugar. Blend hot pearl mix gradually into egg mixture. Heat to boiling, or microwave on med-high 4-5 minutes covered. Stir in vanilla. Serve warm or cold.
