| 9" unbaked pie shell | 4 large eggs | 1 C yogurt |
| 1 t vanilla | 2 C apples, peeled & sliced | 3/4 C honey or maple syrup |
| 1/2 t cinnamon | 1/4 t salt | |
| 1 | Spread apple slices evenly over pie shell. Combine remaining ingredients in the blender and run at high speed for several seconds. Pour custard over apples. Sprinkle on walnuts or almonds, if desired. Bake at 375 F for 45 minutes or until solid when jiggled. |
