| INGREDIENTS: | ||
| baked pie shell, cooled | 1-1/2 C milk | 1 C dried apricots |
| 3 T flour | 2 eggs, separated | 1 C sugar plus 8 T |
| 2 T butter | 1 t vanilla | |
| 1 | Cook apricots until soft; mash. Add 4 T sugar; set aside. Cook egg yolks, milk, 1 C sugar, butter, flour, and vanilla into a custard; cool. Beat egg whites and add 4 T sugar. Fold apricots into the custard and pour in pie shell. Place meringue on custard mixture. Bake at 450 F until brown. |
