Apricot Cream Pie

INGREDIENTS:
baked pie shell, cooled 1-1/2 C milk 1 C dried apricots
3 T flour 2 eggs, separated 1 C sugar plus 8 T
2 T butter 1 t vanilla



1 Cook apricots until soft; mash. Add 4 T sugar; set aside. Cook egg yolks, milk, 1 C sugar, butter, flour, and vanilla into a custard; cool. Beat egg whites and add 4 T sugar. Fold apricots into the custard and pour in pie shell. Place meringue on custard mixture. Bake at 450 F until brown.
