| 4 cups water | 10 drumsticks | 1 small white onion, thinly sliced |
| 1/2 cup fresh mint leaves, finely chopped | 1 teaspoon salt | 1/2 teaspoon ground white pepper |
| 2 fresh, hot, red cayenne peppers, thinly sliced | 4 green onions, finely chopped | 1/2 cup fresh coriander leaves, chopped |
| 1/2 cup roasted peanuts, chopped | ||
| 1 | Bring the water to a boil and add the drumsticks. Simmer for 30 minutes or until the drumsticks are cooked. Discard the water and remove the chicken meat from the bones and shred it. In a small bowl, mix the shredded chicken meat, onion, mint, salt, pepper, cayenne peppers, green onions, and coriander leaves. Sprinkle with the peanuts. Serve with Savory Fish Sauce. |
