Spicy Chicken with Mint Leaves

INGREDIENTS:
4 cups water 10 drumsticks 1 small white onion, thinly sliced
1/2 cup fresh mint leaves, finely chopped 1 teaspoon salt 1/2 teaspoon ground white pepper
2 fresh, hot, red cayenne peppers, thinly sliced 4 green onions, finely chopped 1/2 cup fresh coriander leaves, chopped
1/2 cup roasted peanuts, chopped



1 Bring the water to a boil and add the drumsticks. Simmer for 30 minutes or until the drumsticks are cooked. Discard the water and remove the chicken meat from the bones and shred it. In a small bowl, mix the shredded chicken meat, onion, mint, salt, pepper, cayenne peppers, green onions, and coriander leaves. Sprinkle with the peanuts. Serve with Savory Fish Sauce.
