Baked Ground Pork Casserole

INGREDIENTS:
1 3-1/2 oz pkg cellophane noodles, soaked in warm water for 5 minutes, drained, cut into 2-inch lengths 1/4 cup dried black fungus strips, soaked in warm water for 3 minutes, drained, chopped 2 green onions, chopped
1 small yellow onion, finely chopped 2 lbs lean ground pork 3 tablespoons fish sauce
1/2 teaspoon ground white pepper 1 teaspoon sugar 3 eggs, beaten



1 In a large bowl, thoroughly mix the cellophane noodles, black fungus strips, green onions, onion, pork, fish sauce, pepper, sugar, and eggs. Pour into an oiled 9x13 inch baking pan and press the mixture flat. Bake in a 350 degree oven for 40 minutes or until done. Let cool before cutting into small squares. Serve with Savory Fish Sauce.
