| 1/4 cup canola oil | 2 lbs ground chicken | 1 stalk fresh lemon grass, finely chopped |
| 4 cloves garlic, crushed | 1/4 cup fish sauce | 1 tablespoon sugar |
| 1/2 teaspoon ground black pepper | 2 fresh, hot, red cayenne peppers, finely chopped | 1/2 teaspoon salt |
| 1/4 cup fresh coriander leaves, chopped | 4 green onions, chopped | |
| 1 | Heat the oil in a wok and stir-fry the chicken, lemon grass, and garlic for 10 minutes, stirring occasionally, or until the chicken is cooked. Add the fish sauce, sugar, pepper, cayenne peppers, and salt. Simmer for 5 minutes and garnish with the coriander leaves and green onions. Serve over rice. |
