Spicy Ground Chicken

INGREDIENTS:
1/4 cup canola oil 2 lbs ground chicken 1 stalk fresh lemon grass, finely chopped
4 cloves garlic, crushed 1/4 cup fish sauce 1 tablespoon sugar
1/2 teaspoon ground black pepper 2 fresh, hot, red cayenne peppers, finely chopped 1/2 teaspoon salt
1/4 cup fresh coriander leaves, chopped 4 green onions, chopped



1 Heat the oil in a wok and stir-fry the chicken, lemon grass, and garlic for 10 minutes, stirring occasionally, or until the chicken is cooked. Add the fish sauce, sugar, pepper, cayenne peppers, and salt. Simmer for 5 minutes and garnish with the coriander leaves and green onions. Serve over rice.
