| INGREDIENTS: | ||
| 1 whole garlic bulb, minced | 1-1/2 teaspoon salt | 1-1/2 teaspoons paprika |
| 1/2 teaspoon pepper | 1 (3-1/2 pound) broiler-fryer | 1/2 cup water |
| 1 | Combine garlic, salt, paprika, and pepepr in a small bowl; mash with the back of a spoon to form a paste. Rub garlic mixture inside chicken cavity and over outside of chicken. Cover chicken, and chill at least 8 hours. |
| 2 | Place chicken, breast side up, in a large shallow roasting pan; add 1/2 cup water to pan. Loosely cover chicken with aluminum foil. Bake at 425 for 30 minutes. Reduce heat to 375 and bake 1 hour or until done, basting occasionally and adding water to pan, if necessary. |
