INGREDIENTS:
25 lbs loaf sugar 9 seville oranges 9 gallons cowslip flowers
yeast 1 quart brandy



1 To make nine gallons of wine, boil for half an hour nine gallons of water with 25 lbs of loaf preserving sugar and leave for 36 hours. Then put into a tub the juice and peel of nine Seville oranges and nine gallons of cowslip flowers or pips, over these put the sugar and water and leave them to stand for about four days, stirring daily.
2 Afterwards strain, add a quart of brandy, put the wine into a cask, leave for two months, then bottle it.
