| INGREDIENTS: | ||
| 4 large sweet potatoes, cooked | 1/4 pound margarine, softened | 1 teaspoon salt |
| 1/2 teaspoon cinnamon | 1/2 cup brown sugar | 2 cups mini-marshmallows |
| 1 | Preheat oven to 350 F. |
| 2 | Peel and mash the sweet potatoes. Mix in margarine, salt, and cinnamon. Stir in brown sugar. |
| 3 | Place potatoes in a 2-quart casserole dish. |
| 4 | Bake for 20 minutes. |
| 5 | Remove from oven and sprinkle mini-marshmallows evenly over top of potatoes. |
| 6 | Return to oven and bake for another 10 minutes, until mini-marshmallows are golden brown. |
