INGREDIENTS:
4 eggs 4 tsp sugar 1 tbls butter
1/3 cup cherry brandy, optional



1 Separate eggs. Stir the egg yolks and sugar until frothy. Beat egg whites until stiff and fold in. Melt butter in a frying pan, and with the pan very hot, brown mixture quickly, or place briefly in a hot oven (425). "Nockerlin" is sometimes cut in strips and served with flaming cherry brandy.
