Cut bacon into strips. Heat butter in a large pan, add bacon, onion and garlic; cook until onion is soft and the bacon crisp. |

Add paprika, salt and meat. Cook, stirring, over heat for 2-3 minutes. Add tomato, tomato paste and stock. Simmer, covered, 1-1/2 to 2 hours, or until meat is tender. |

Add potato and cook soup for another 20 minutes, or until the potato is tender. Season with salt and pepper, if desired. Refrigerate overnight. Skim fat from surface, reheat and serve. |
