| 4 quarts of apples | 1 gallon boiling water | 2 lemons |
| piece of bruised ginger | a few cloves | sugar |
| 1 | Crush apples, pour over boiling water, cover with cloth and leave for fortnight, squeezing daily. Strain, add cloves and bruised ginger and measure, allowing 1/2 lb sugar to each pint of liquor. Add juice of lemons, stir well until sugar has dissolved. Leave to stand until a scum has formed on surface. Skim, pour into bottles, and tie corks down securely. |
