INGREDIENTS:
4 quarts of apples 1 gallon boiling water 2 lemons
piece of bruised ginger a few cloves sugar



1 Crush apples, pour over boiling water, cover with cloth and leave for fortnight, squeezing daily. Strain, add cloves and bruised ginger and measure, allowing 1/2 lb sugar to each pint of liquor. Add juice of lemons, stir well until sugar has dissolved. Leave to stand until a scum has formed on surface. Skim, pour into bottles, and tie corks down securely.
