Deep Dish Pumpkin-and-Meat Pie (Kurbispastete)

INGREDIENTS:
puff-pie crust bread crumbs 2 lbs pumpkin
2 tbls vinegar 1/4 cup grated cheese 1 lb meat, ground
salt and pepper basil 1/2 cup cream
1 tbls butter 1 egg yolk



1 Prepare dough, roll out and line a greased baking dish with it. Sprinkle with bread crumbs. Cube pumpkin meat, cover with water, add vinegar and cook until tender, 20 to 30 minutes. Drain. Arrange alternate layers of pumpkin, grated cheese and ground meat, ending with a layer of pumpkin. Season each layer well. Pour cream over filling, sprinkle with grated cheese and dot with butter. Roll our remaining dough, cut in strips and arrange decoratively on top. Brush with egg yolk and bake in moderate (350 F) oven for about one hour.
