| 2 pounds beef or pork | 2 tablespoon lard | 1 onion, chopped |
| 2 small tomatoes, peeled and chopped | 1/2 teaspoon chopped parsley | 1 tablespoon chopped chives |
| 1 clove garlic, minced | 2 teaspoons salt | 1-1/2 cups water |
| 3 hard-cooked eggs, sliced | 1/2 cup pitted green olives | |
| 1 | Chop beef or pork very fine, brown in a refogado of lard, onion, tomatoes, parsley, chives, garlic, and salt. Add 1 cup water and cook until meat and vegetables are tender and dry; add 1/2 cup water, if necesary, during cooking. Serve garnished with slices of hard-cooked eggs and olives. |
