Brazilian Chopped Meat (Picadinho a Brasileira)

INGREDIENTS:
2 pounds beef or pork 2 tablespoon lard 1 onion, chopped
2 small tomatoes, peeled and chopped 1/2 teaspoon chopped parsley 1 tablespoon chopped chives
1 clove garlic, minced 2 teaspoons salt 1-1/2 cups water
3 hard-cooked eggs, sliced 1/2 cup pitted green olives



1 Chop beef or pork very fine, brown in a refogado of lard, onion, tomatoes, parsley, chives, garlic, and salt. Add 1 cup water and cook until meat and vegetables are tender and dry; add 1/2 cup water, if necesary, during cooking. Serve garnished with slices of hard-cooked eggs and olives.
