| 2 teaspoons small pieces fresh gingerroot | 1 fresh red chili pepper | 1 clove garlic |
| 2 teaspoons granulated sugar | 5 teaspoons fish sauce | 1 tablespoon water |

| 1 | Put the ginger into a mortar with the red chili pepepr, garlic, sugar, and fish sauce. Pound to a paste with the pestle. Squeeze the juice of the lime into the mortar, then remove the pulp of the lime section with a small knife and add it to the paste. Add the water. Mix well. |
