INGREDIENTS:
2 teaspoons small pieces fresh gingerroot 1 fresh red chili pepper 1 clove garlic
2 teaspoons granulated sugar 5 teaspoons fish sauce 1 tablespoon water
1/8 fresh lime



1 Put the ginger into a mortar with the red chili pepepr, garlic, sugar, and fish sauce. Pound to a paste with the pestle. Squeeze the juice of the lime into the mortar, then remove the pulp of the lime section with a small knife and add it to the paste. Add the water. Mix well.
