Banana Scotch Muffins

INGREDIENTS:
1 ripe, large banana, peeled 1 egg, beaten 1/2 cup sugar
1/4 cup milk 1/4 cup vegetable oil 1 teaspoon vanilla
1 cup all-purpose flour 1 cup quick-cooking rolled oats 1 teaspoon baking powder
1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butterscotch chips



1 Puree banana in blender (2/3 cup). In medium bowl, combine pureed banana, egg, sugar, milk, oil and vanilla. In large bowl, combine flour, oats, baking powder, baking soda and salt. Stir banana mixture into dry ingredients with butterscotch chips until just blended. Spoon into well greased 2-1/2 inch muffin cups. Bake in 400 oven 12 to 15 minutes. Remove from pan.
