Fried Cheese (Saganaki)

INGREDIENTS:
225 g/ 8 oz kefalograviera or kefalotiri cheese plain flour, for coating olive oil, for shallow frying
freshly ground black pepper lemon juice lemon wedges, to serve
crusty bread, to serve



1 Cut the cheese into slices or wedges 1 cm/1-1/2 in thick. Moisten with water, shake off the excess, and coat with the flour.
2 Pour the oil into the frying pan until 5 mm/ 1/4 in deep. Heat over a medium-high flame until almost smoking. Add the cheese in a single layer and shallow fry for about 2 minutes on each side, until golden brown. Sprinkle with pepper and lemon juice. Serve immediately, directly from the pan, with lemon wedges and bread.
