Orange Pudding (Mihallablyit burtu'an)

INGREDIENTS:
3 cups orange juice 3 tablespoons ground rice 1 cup water
sugar to taste grated rind of 1 orange almonds, peeled, halved, and roasted



1 Stir all the ingredients together-except the almonds-and cook over very low flame, stirring constantly, until the pudding thickens like thin custard. Pour into a shallow serving dish, let cool, and decorate with almonds.
2 The quantity of sugar depends on the type-and thus sweetness-of the oranges. With burtu'an sukkari, or sweet oranges, use only half the normal amount of sugar.
