| INGREDIENTS: | ||
| 3 cups orange juice | 3 tablespoons ground rice | 1 cup water |
| sugar to taste | grated rind of 1 orange | almonds, peeled, halved, and roasted |
| 1 | Stir all the ingredients together-except the almonds-and cook over very low flame, stirring constantly, until the pudding thickens like thin custard. Pour into a shallow serving dish, let cool, and decorate with almonds. |
