Sicilian Fried Olives (Olive Alla Siciliana)

INGREDIENTS:
40 black olives 4 tablespoons olive oil 2-3 cloves garlic, crushed
3 tablespoons red wine vinegar 2 tablespoons finely chopped fresh marjoram crusty bread, to serve



1 Rinse the olives; dry well on kitchen paper. Heat the oil in a fry pan. Add the garlic and cook for 1 minute, stirring frequently. Add the vinegar and cook until most of the liquid has evaporated. Sprinkle with marjoram, toss well and serve piping hot with bread.
