| 40 black olives | 4 tablespoons olive oil | 2-3 cloves garlic, crushed |
| 3 tablespoons red wine vinegar | 2 tablespoons finely chopped fresh marjoram | crusty bread, to serve |
| 1 | Rinse the olives; dry well on kitchen paper. Heat the oil in a fry pan. Add the garlic and cook for 1 minute, stirring frequently. Add the vinegar and cook until most of the liquid has evaporated. Sprinkle with marjoram, toss well and serve piping hot with bread. |
