INGREDIENTS:
butter, melted 2 eggs salt and pepper to taste
fresh-grated Parmesan or Romano cheese



1 Put a little melted butter in the bottom of an individual ovenproof casserole. Break in the eggs. Top with salt, pepper, and a little cheese. Bake at 325 until eggs just begin to set, about 10-15 minutes.
