| INGREDIENTS: | ||
| 2 cups bran cereal | 3/4 cup milk | 1 egg, beaten |
| 3/4 cup peeled, finely chopped apple (about 1 medium) | 1/4 cup raisins | 1/4 cup honey |
| 2 tablespoons vegetable oil | 1-1/4 cups all-purpose flour | 2 teaspoons baking powder |
| 1/2 teaspoon ground cinnamon | ||
| 1 | Preheat oven to 400. Grease or paper-line 12 (2-1/2 inch) muffin cups. In medium bowl, combine cereal, milk, egg, apple, raisins, honey and oil. Let stand 10 minutes. In large bowl, combine flour, baking powder and cinnamon. Add cereal mixture to flour mixture all at once, stirring just until moistened. Spoon into muffin cups. Bake 15 to 17 minutes or until wooden pick inserted in center comes out clean. Remove from pan. |
