Chocolate and Nut "Cigars" (Poura Me Tsokolata)

INGREDIENTS:
FILLING: 1 egg yolk 60 g/2 oz caster sugar 75 g/2-3/4 oz finely chopped walnuts
75 g/2-3/4 oz finely chopped almonds 25 g/1 oz dark chocolate, chopped 1/4 teaspoon ground cinnamon
TO ASSEMBLE: 14 sheets filo pastry 1 egg white, lightly beaten unsalted butter, melted
icing sugar, sifted



1 Preheat the oven to 325-350 F/160-180 C/gas mark 3-4.
2 FOR THE FILLING: Beat the egg yolk in a bowl with sugar until it is light and creamy. Stir in the nuts, chocolate and cinnammon and mix to a stiff paste.
3 TO ASSEMBLE: Stack the filo sheets on a board and cut them into strips about 15 cm/6 inch wide and 30 cm/12 inch long. Stack them onto a cloth and cover with a folded dry cloth or heavy plastic.
4 Take 2 filo strips and place on a work surface with the narrow end towards you. Brush one stip lightly with egg white and top with the second strip. Place about 3 teaspoons of filling 1 cm/1/2 inch in from the lower and side edges in an even strip. Fold in the base and sides of the pastry, brush the uncovered pastry lightly with egg white and roll up firmly to into a cigar shape. Place them, seamside down, on a greased baking sheet. Repeat with the remaining ingredients.
5 Brsh the tops and sides of rolls with melted butter and bake for about 15 minutes, until golden. Leave the rolls on the baking sheet and sieve icing sugar over them while they are still hot. Allow them to cool. Store them in a sealed container.
