| INGREDIENTS: | ||
| 1 pound potatoes, boiled | 2 tablespoons mustard or canola oil | 1 teaspoon black mustard seed |
| 2 teaspoons white sesame seed | 1 teaspoon white poppy seed | 1 teaspoon Garlic Puree |
| 1-2 teaspoons water | 2 tablespoons Onion Puree | 2 tablespoons fresh cilantro |
| 2 teaspoons dried mint | 2 tablespoons Curry Paste (storebought or homemade) | 2 tablespoons brinjal pickle, chopped up |
| salt to taste | ||
| 1 | Cool and dice the potato into 1/2 inch cubes. |
| 2 | Heat the oil. Stir-fry the seeds (1 minute), the garlic puree (another minute), and the onion puree (2 more minutes). |
| 3 | Add a little water to ease any sticking, then add in the remaining ingredients, including the diced potato. Stir well and remove from the heat. It should be dry. Serve cold. |
