Cold Potato Pickle (Aloo-Achar)

INGREDIENTS:
1 pound potatoes, boiled 2 tablespoons mustard or canola oil 1 teaspoon black mustard seed
2 teaspoons white sesame seed 1 teaspoon white poppy seed 1 teaspoon Garlic Puree
1-2 teaspoons water 2 tablespoons Onion Puree 2 tablespoons fresh cilantro
2 teaspoons dried mint 2 tablespoons Curry Paste (storebought or homemade) 2 tablespoons brinjal pickle, chopped up
salt to taste



1 Cool and dice the potato into 1/2 inch cubes.
2 Heat the oil. Stir-fry the seeds (1 minute), the garlic puree (another minute), and the onion puree (2 more minutes).
3 Add a little water to ease any sticking, then add in the remaining ingredients, including the diced potato. Stir well and remove from the heat. It should be dry. Serve cold.
