Blueberry Streusel Muffins

INGREDIENTS:
1/3 cup sugar 1/4 cup butter or margarine, softened 1 egg
2-1/3 cups all-purpose flour 1 tablespoon plus 1 teaspoon baking powder 1 cup milk
1 teaspoon vanilla 1-1/2 cups fresh blueberries STREUSEL TOPPING: 1/2 cup sugar
1/3 cup all-purpose flour 1/2 teaspoon ground cinnamon 1/4 cup cold butter or margarine



1 Preheat oven to 375 F. Paper-line 2-1/2-inch muffin cups. Prepare Streusel Topping; set aside.
2 In large bowl, cream sugar and butter until light and fluffy. Add egg, mixing well. In small bowl, combine flour and baking powder. Alternately add flour mixture and milk to the butter mixture, stirring well after each addition. Stir in vanilla. Fold in blueberries. Spoon into muffin cups. Sprinkle Streusel Topping over tops. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Remove from pan.
3 Streusel Topping: In small bowl, combine all mixture resembles crumbs.
