| INGREDIENTS: | ||
| 1 medium cantaloupe or honeydew melon | 1 cup small strawberries or seedless red grapes | 2 5-1/2 ounce cans chunk-style chicken, one 9-1/4 ounce can tuna (water pack), or one 12-1/2 ounce can boneless skinless pink salmon |
| 1 pint (2 cups) deli creamy coleslaw | ||
| 1 | To peel melon, cut melon lengthwise in half. Remove seeds. Then cut each melon-half lengthwise in half again. Remove peel from pieces. Cut each melon quarter into 3 slices. Set aside. |
| 2 | Cut the strawberries or grapes in half. Drain the chicken, tuna, or salmon. In a medium mixing bowl combine chicken, tuna, or salmon and coleslaw. Toss lightly to coat. Add strawberries or grapes, then toss lightly again. |
| 3 | For salads, overlap the melon slices on salad plates. Spoon the chicken mixture on top. |
