Oil Pastry (Filo Horiatiko)

INGREDIENTS:
600g/1 lb 5 oz plain flour 1/2 teaspoon salt 175ml/6 fl oz olive oil
125ml/4 fl oz cold water 3 teaspoons lemon juice



1 Sift the flour and salt into a bowl. Add the oil and rub in with your fingertips until evenly distributed. Add the water and lemon juice and mix with your hands to a soft dough. Knead lightly to form a ball, wrap in cling film and leave for 30 minutes before using.
2 When required roll out on a lightly floured board.
3 Food Processor Method: Place the flour in a food processor bowl. Add the oil and process until evenly distributed. Gradually pour in the water and lemon juice to obtain a crumbly soft dough. Turn onto a work surface and knead into a ball. Wrap and allow to stand for 30 minutes.
