Sift the flour and salt into a bowl. Add the oil and rub in with your fingertips until evenly distributed. Add the water and lemon juice and mix with your hands to a soft dough. Knead lightly to form a ball, wrap in cling film and leave for 30 minutes before using. |

Food Processor Method: Place the flour in a food processor bowl. Add the oil and process until evenly distributed. Gradually pour in the water and lemon juice to obtain a crumbly soft dough. Turn onto a work surface and knead into a ball. Wrap and allow to stand for 30 minutes. |
