Chestnut Dessert (Monte Bianco)

INGREDIENTS:
450 g/1 lb fresh chestnuts, shelled and skinned 3 tablespoons milk 60 g/2 oz sugar
1 teaspoon vanilla essence 1 tablespoon brandy 225 ml/8 fl oz whipping cream, whipped
grated dark chocolate, to serve



1 Place the shelled and skinned chestnuts in a saucepan, cover them with water and bring to the boil. Cover and boil gently for about 30 minutes until very soft. Drain well. Return to the saucepan, stir in the milk and sugar and heat until the moisture evaporates. Add more sugar to taste if necessary. Cool, then puree in a food mill or food processor. Transfer to a bowl, stir in the vanilla and brandy and chill.
2 Pile the mixture in mounds in small dessert glasses and pipe a swirl of whipped cream on top of each. Sprinkle the cream with chocolate and serve immedately.
