INGREDIENTS:
1/4 C oil 1 onion, thinly sliced 2 (10 oz) pkgs frozen leaf spinach
1 lb Monterey Jack cheese, shredded 1/4 lb Feta cheese, crumbled 6 eggs, beaten
1/2 lb unsalted butter or margarine, melted 1 lb filo dough, fresh or frozen and thawed



1 Heat oil in skillet. Add onions and saute, stirring, 5 minutes or until translucent. Place mixture in large bowl. Cook spinach according to package directions. Drain and squeeze dry. Add to onions in bowl along with cheeses and eggs. Mix well. Brush 9x13" baking pan with melted butter. Line pan with 1/2 lb filo. Spread spinach mixture evenly over top. Continue layering remaining filo dough, brushing each sheet lightly with butter. Butter top layer and fold any overlapping edges under. Bake at 350 25-30 minutes. Let rest 15 minutes. Cut into squares and serve.
