| INGREDIENTS: | ||
| 1 (8 oz) pkg. frozen chopped spinach | 1 (8 oz) pkg. frozen black-eyed peas | 1 small onion, chopped |
| 2 T oil | 1 (6 oz) can tomato sauce | 1 C water |
| juice of 1/2 lemon | 1/4 tsp salt | 1/4 tsp allspice |
| 1 | Wash frozen spinach and peas in colander with cold water to thaw. Drain well. Saute onions in pan in heated oil until softened, 4-5 minutes. Stir in spinach and black-eye peas. Add tomato sauce, water, lemon juice, salt and allspice. Simmer, covered, 30 minutes. |
