Black-Eyed Peas with Spinach

INGREDIENTS:
1 (8 oz) pkg. frozen chopped spinach 1 (8 oz) pkg. frozen black-eyed peas 1 small onion, chopped
2 T oil 1 (6 oz) can tomato sauce 1 C water
juice of 1/2 lemon 1/4 tsp salt 1/4 tsp allspice



1 Wash frozen spinach and peas in colander with cold water to thaw. Drain well. Saute onions in pan in heated oil until softened, 4-5 minutes. Stir in spinach and black-eye peas. Add tomato sauce, water, lemon juice, salt and allspice. Simmer, covered, 30 minutes.
