Poached Salmon with Mushroom Sauce

INGREDIENTS:
2 C minced mushrooms 1/4 C minced onion 4 (6 oz) salmon steaks or salmon fillets
1-1/2 C dry white wine 2 T lemon juice water
1 C whipping cream 1/4 C butter salt, pepper



1 Combine mushrooms and onion in large skillet. Arrange salmon steaks on top. Pour in wine, lemon juice and enough water to cover. Bring to boil. Reduce heat and simmer, covered, over low heat 10 minutes per inch, measured at thickest part, until salmon flakes easily with fork. Place salmon steaks on hot platter. Continue to cook pan juices until reduced to about 1/2 cup. Stir in cream. Add butter and cook and stir over low heat until melted. Season to taste with salt and pepper. Spoon sauce over salmon and serve immediately.
