| INGREDIENTS: | ||
| 1 (16 oz) can tomatoes | 1 lb fish fillets | salt, freshly ground pepper |
| 1/4 C chopped fresh parsley | 1/4 C fine fresh bread crumbs | 2 T finely chopped green onions (including tops) |
| 1 T butter, melted | 2 cloves garlic, finely chopped | |
| 1 | Drain and coarsely chop tomatoes. Spoon half the tomatoes into mixrowave dish just large enough to hold fillets in single layer. Arrange fillets op top. Sprinkle with salt and pepper to taste. Top with remaining tomatoes. Combine parsley, bread crumbs, green onions, butter and garlic in small bowl. Sprinkle over tomatoes. Partially cover dish and microwave on High (100% power) 9-12 minutes or until fish is opaque. Let stand 3 minutes before serving. |
