Cauliflower Pie (Torta de Couve-Flor)

INGREDIENTS:
1 large cauliflower salt 2 tablespoons butter
2 tablespoons flour 1 dash nutmeg 1/2 cup cream
2 egg yolks 4 tablespoons grated Parmesan cheese melted butter



1 Separate flowers and boil until tender in salted water, but do not overcook. Brown butter and flour, pour in 1-1/2 cups of the water in which you cooked the cauliflower, and add the nutmeg. Cook until it thickens. Beat cream and egg yolks together and add to the sauce. Taste for salt. Place the cauliflower in a buttered casserole, cover with sauce, grated cheese, and melted butter, put into a moderate oven, and bake until it bubbles and cheese is melted.
