Diamond Delight (Shakar Lokhoom)

INGREDIENTS:
2 C butter, melted 1-1/2 C sugar 5 egg yolks
4-1/2 C flour or more if needed 1 egg white, beaten 1 C blanched almond halves



1 Beat butter until fluffy. Add sugar slowly and beat until light and fluffy. Add egg yolks, one at a time, beating constantly. Fold in flour until pastry is consistency of pie crust. Press dough into 15x9x1-1/2 inch pan (jelly roll pan). Roll top gently with rolling pin so it is smooth. Brush surface with beaten egg white. Score dough with straight lines, then diagonally into diamond shapes. Press 1 almond half into center of each diamond. Bake at 350 F for 40 minutes or until golden brown.
