Armenian Layered Pancake (Gotmar)

INGREDIENTS:
1 C water 1 T salt 1 tsp baking powder
flour (enough to make slightly sticky dough) 2 sticks, butter, melted



1 Mix together first 3 ingredients. Add sifted flour gradually mixing with wooden spoon until mixture is kneadable. Knead until well combined. Divide into 2 balls and let them rest about 1 hour. After 1 hour, flatten ball and roll out to about 30" in diameter, using long thin rolling pin. Brush melted butter on all parts of dough. Fold over 3" repeatedly beginning at one end. You will end up with a long strip. Set aside while you repeat this process with second ball. (If you fold strip and wrap it, the strip may be frozen for future use.) Cut long strip into about 20 (2") pieces. Roll each piece into a 3" to 4" square with conventional rolling pin. Cook in ungreased fry pan until golden turning both sides. Serve hot.
