Beef Hunter's Style

INGREDIENTS:
4 medium beef shanks 3 Tbs butter 2 large onions, chopped
1 clove garlic, mashed 2 medium carrots, sliced 2 medium parsnips, sliced
1/2 small celeriac, diced 2 cups dry red wine juice of 1 lemon
zest of 1 lemon 2 bay leaves 1/2 tsp thyme
1/4 tsp ground allspice 2 Tbs fresh parsley, chopped



1 Melt the butter on medium-high in a large frying pan. When quite hot, put in the beef shanks and brown them on both sides. Add the onions and garlic and fry, stirring occasionally, till almost golden. Add the carrots, parsnips, and celeriac and cook, stirring occasionally, for 5 minutes. Pour in the red wine and some water, if needed, to just cover the meat. Add the lemon juice, grated lemon zest, bay leaves, thyme, allspice, and parsley. Season well with salt and freshly ground black pepper. Bring to a low boil, cover, reduce the heat, and simmer till the beef is tender, about 1-1/2 hours.
2 Remove the beef from the pan. Remove the bay leaves and discard them. Puree the sauce either by using a food processor or by passing it through a fine sieve. Put the sauce back in the pan and bring to a low boil. Put the meat back in and heat through. Check the seasonings for salt and pepper.
3 Serve with dumplings, potatoes, or rice and a green salad.
