| Basic Pizza Dough, made with vegetable oil and 1/4 cup granulated sugar | 6 tablespoons unsalted butter | 5 or 6 flavorful apples such as Gravenstein or McIntosh, peeled (if desired), cored, and thinly sliced |
| 1/2 cup firmly packed light brown sugar | ground cinnamon | cornmeal, if using a pizza peel |
| about 1/3 cup unsalted butter, melted | 1 pound St. Andre or other triple creme cheese, rind discarded, cut into 1-inch cubes | whole fresh mint leaves for garnish |
| good-quality vanilla ice cream, unsweetened whipped cream, or creme fraiche (optional) | ||
| 1 | Prepare the dough and preheat the oven as directed in the basic recipe, adding the granulated sugar to the flour. Use vegetable oil in place of the olive oil. |
| 2 | Melt 6 tablespoons butter in a saute pan or skillet over medium heat. Add the apples and saute them until they are tender but still hold their shape, about 10 minutes; cover the pan for the last few minutes of cooking. When the apples are almost done, stir in the brown sugar and the cinnamon to taste. Reserve. |
| 3 | Shape the pizza dough as directed in the basic recipe. Prick dough all over with the tines of a fork and brush it with melted butter. |
| 4 | Transfer the pie to the preheated baking surface and bake until the crust just begins to brown, about 6 minutes. Remove from the oven and cover with the cheese, leaving a 1/2-inch border around the edges. Arrange the apples in an overlapping pinwheel pattern over the cheese. Return to the oven and bake until the crust is golden brown and puffy and the cheese is warmed through and beginning to melt, about 4 minutes. Remove from the oven to a cutting tray or board and lightly brush the crust with melted butter. Garnish with mint leaves. Slice and serve immediately. Accompany with small scoops of ice cream, whipped cream, or creme fraiche, if desired. |
