Spinach Boereg In The Round

INGREDIENTS:
3/4 C butter 1 bunch green onions, sliced or chopped 2 (10 oz) pkgs. chopped frozen spinach, thawed
5 eggs 1/4 lb Feta cheese, crumbled 1 pkg filo dough
1/2 C milk



1 Melt 1/2 C butter in skillet. Add green onions and saute 3-5 minutes, stirring, until limp. Squeeze excess water from thawed spinach and stir spinach into onion mixture. Mix well. Drain off any excess liquid. Let cool. Beat 2 eggs and mix into cooled spinach mixture. Mix in crumbled Feta cheese. Divide into 3 equal portions. Set aside. Generously spray Bundt pan with vegetable cooking spray. Melt remaining 1/4 C butter. Arrange 3 filo sheets in half moon shape, on each side of Bundt pan. Brush generously with melted butter. Spoon in 1/3 of spinach mixture, spreading evenly. Repeat process, making 3 layers in all, ending with filo dough. Beat together milk and remaining 3 eggs and pour over top. Bake at 375 F 1 hour or until golden. Let boereg cool. Place large serving platter on top of pan and invert. Slice and serve.
