Combine cheese and eggs in large bowl and mix well. Stir in parsley or pimiento. Set aside. Lightly butter 12x14" baking tray with sides. Remove filo from package. Find center of sheets, unfold and lay sheets flat on work surface. (Work with 1 sheet at a time, keeping remaining sheets covered with slightly damp towel to prevent drying out.) Arrange 1 sheet filo in pan, cutting or folding dough to fit baking tray. Lightly buttering each except the last one. Evenly spread with cheese mixture, then continue layering and buttering remaining sheets. Pour any leftover butter over top. Cut into squares. Bake at 425 F 15 minutes or until golden and bubbly. Remove from oven. Recut squares and serve immediately. |
