Baby Greens and Fruit with Lime Vinaigrette

INGREDIENTS:
1 cup vegetable oil 1/2 cup fresh lime juice 2 teaspoons sugar
16 cups mixed baby greens 5 kiwis, peeled, cut into wedges 4 oranges, peeled, white pith removed, fruit sliced into rounds
2 cups 1/2-inch pieces peeled jicama 1 cup thinly sliced red onion 1 cup pine nuts, toasted
2 avocados, peeled, pitted, diced



1 Stir first 3 ingredients in small bowl until well blended. Season dressing with salt and pepper.
2 Mix remaining ingredients in large bowl. Add half of dressing to bowl and toss to coat. Serve, passing remaining dressing separately.
