Peanut Butter Banana Muffins

INGREDIENTS:
1-1/2 cups unsifted flour 1 teaspoon baking powder 1 teaspoon baking soda
1/2 cup whipping cream 6 tablespoons margarine or butter, softened 1/3 cup peanut butter
1/4 cup packed light brown sugar 2 large, ripe bananas, mashed 1/2 cup pure maple syrup
1 egg 1 teaspoon vanilla 1/4 cup chopped peanuts



1 Preheat oven to 350 F. In small bowl, combine flour, baking powder and baking soda. In large mixer bowl, beat cream, margarine, peanut butter and sugar until smooth. Add bananas, maple syrup, egg and vanilla; mix well. Add flour mixture; stir until moistened. Fill paper-lined 2-1/2 inch muffin cups 3/4 full; sprinkle with nuts. Bake 25 to 30 minutes or until golden brown. Remove from pans; serve warm.
