| INGREDIENTS: | ||
| 3 cups water | 1 teaspoon salt | 1 cup cornmeal |
| 3 tablespoons butter plus butter for the mold | ||
| 1 | In a heavy saucepan bring the water and salt to a boil and pour in the cornmeal in a thin, steady stream, stirring constantly with a wooden spoon. Cook over moderate heat until the mixture is smooth and thick. Stir in the 3 tablespoons of butter. Butter a 1-1/2 quart mold and turn the cornmeal mixture into it. Pat it down, then unmold onto a serving dish. |
