Mold Cornmeal (Angu de Farinha de Milho)

INGREDIENTS:
3 cups water 1 teaspoon salt 1 cup cornmeal
3 tablespoons butter plus butter for the mold



1 In a heavy saucepan bring the water and salt to a boil and pour in the cornmeal in a thin, steady stream, stirring constantly with a wooden spoon. Cook over moderate heat until the mixture is smooth and thick. Stir in the 3 tablespoons of butter. Butter a 1-1/2 quart mold and turn the cornmeal mixture into it. Pat it down, then unmold onto a serving dish.
2 Bacon fat may be used instead of butter.
