| INGREDIENTS: | ||
| 2 large ripe bananas, mashed | 3/4 C sugar | 2 eggs |
| 6 T butter, melted and cooled | 1 tsp vanilla | 2 C flour |
| 2 tsp baking soda | 1/4 C buttermilk | 1 C chopped pecans or walnuts |
| 1 | Combine bananas, sugar and eggs in large bowl and beat until well combined. Stir in melted butter and vanilla. Add flour, baking soda, buttermilk and nuts. Stir just until combined. Do not overmix. Spoon into 10-12 muffin cups. Bake at 350 F 20-25 minutes. |
