Tomato Sauce (Molho ao Tomate)

INGREDIENTS:
3 tablespoons olive oil 6 large, ripe tomatoes, coarsely chopped 1 clove garlic, minced
3 or 4 fresh basil leaves, chopped, or 1 teaspoon dried basil salt, freshly ground pepper



1 Heat the oil in a saucepan and add the tomatoes, garlic, and basil. Simmer over low heat for 3 or 4 minutes, stirring occasionally. Season to taste with salt and pepper and stir in 1/2 cup warm water. Simmer over low heat, stirring from time to time, until the mixture is quite thick. Work the mixture through a sieve.
