| 2 cups cassava (manioc) meal | 1/4 pound (1/4 cup) butter | salt |
| 3 hardboiled eggs, peeled and chopped | ||
| 1 | In a heavy skillet, preferably iron, toast the cassava meal until it turns a pale beige, stirring constantly with a wooden spoon so that it colors evenly. Put the butter into a small saucepan and melt it over low heat. Pour the butter over the cassava meal, stirring to mix evenly. Season to taste with salt and stir in the eggs. Serve in a bowl as an accompaniment to meats or poultry, or with Feijoada Completa (Black Beans with Mixed Meats). |
