My Mother's Delicious Artichoke Appetizer

INGREDIENTS:
3 medium onions, sliced olive oil 2 (14 oz) cans artichokes, drained
1 T chopped fresh dill juice of 1 lemon salt, black pepper
1/2 C water



1 Saute onions in olive oil until limp, but do not brown. Arrange artichokes on top of onions. Sprinkle with dill, lemon juice and salt and pepper to taste. Add 1/2 C water. Simmer, covered, 20-30 minutes. Remove from heat. Cool completely. Transfer to bowl and refrigerate. Serve chilled.
