| INGREDIENTS: | ||
| 3 medium onions, sliced | olive oil | 2 (14 oz) cans artichokes, drained |
| 1 T chopped fresh dill | juice of 1 lemon | salt, black pepper |
| 1/2 C water | ||
| 1 | Saute onions in olive oil until limp, but do not brown. Arrange artichokes on top of onions. Sprinkle with dill, lemon juice and salt and pepper to taste. Add 1/2 C water. Simmer, covered, 20-30 minutes. Remove from heat. Cool completely. Transfer to bowl and refrigerate. Serve chilled. |
