| INGREDIENTS: | ||
| 1 (15-1/2 ounce) can salmon | 2 green onions | 1/2 cup dry seasoned bread crumbs |
| 1 egg | vegetable oil | |
| 1 | Drain salmon, place in a bowl and flake with a fork. |
| 2 | Thinly slice green onions and add to salmon along with 2 tablespoons bread crumbs and egg. Mix to blend well. |
| 3 | Form into 6 oval patties 1/2 to 3/4-inch thick. Dip patties in remaining bread crumbs to coat. |
| 4 | Heat about 1/4 inch of oil in a large skillet over medium heat. |
| 5 | Add salmon patties and cook, turning once, until both sides are crisp and golden and croquettes are heated through, about 7 minutes total. |
