Quick Salmon Croquettes

INGREDIENTS:
1 (15-1/2 ounce) can salmon 2 green onions 1/2 cup dry seasoned bread crumbs
1 egg vegetable oil



1 Drain salmon, place in a bowl and flake with a fork.
2 Thinly slice green onions and add to salmon along with 2 tablespoons bread crumbs and egg. Mix to blend well.
3 Form into 6 oval patties 1/2 to 3/4-inch thick. Dip patties in remaining bread crumbs to coat.
4 Heat about 1/4 inch of oil in a large skillet over medium heat.
5 Add salmon patties and cook, turning once, until both sides are crisp and golden and croquettes are heated through, about 7 minutes total.
