Strawberry Soup

INGREDIENTS:
1 lb fresh strawberries, cleaned and hulled 2 Tbs icing sugar 1 cup plain yogurt, preferably Balkan
1/2 cup of heavy cream



1 Slice the strawberries, place in a bowl, and sprinkle on the icing sugar. Leave to sit for about 2 hours in a cool place. Remove 1/2 cup of the sliced strawberries and reserve. Mix the yogurt and cream into the bowl of strawberries. Either puree in a food processor or pass through a sieve. Serve with the reserved strawberry slices and a sprig of mint.
