| INGREDIENTS: | ||
| 1 pound boneless pork, cut into 3 pieces | 4 cups (1 quart) water | 1 clove garlic, chopped |
| 1 teaspoon chopped ginger | 2 tablespoons corn oil | 2 cups Tamarind Sauce with Pineapple |
| 1 | In a large saucepan cook the pork in the water with the garlic and ginger over moderate heat for 45 minutes, or until tender. Drain, cool slightly, and cut into thin slices. |
| 2 | Heat the oil in a skillet and brown the slices rapidly over high heat for 1/2 minute. Add the slices to the warm tamarind sauce. |
