Boneless Pork in Tamarind Sauce (Chancho con Salsa Tamarindo)

INGREDIENTS:
1 pound boneless pork, cut into 3 pieces 4 cups (1 quart) water 1 clove garlic, chopped
1 teaspoon chopped ginger 2 tablespoons corn oil 2 cups Tamarind Sauce with Pineapple



1 In a large saucepan cook the pork in the water with the garlic and ginger over moderate heat for 45 minutes, or until tender. Drain, cool slightly, and cut into thin slices.
2 Heat the oil in a skillet and brown the slices rapidly over high heat for 1/2 minute. Add the slices to the warm tamarind sauce.
3 Serve immediately, with white rice and various salads.
