INGREDIENTS:
3 tablespoons unsalted butter 1 medium onion, finely chopped 1 clove garlic, crushed with the flat side of a knife
2 pounds fresh, ripe tomatoes, coarsely chopped, or 2 cups canned plum tomatoes coarsely chopped, with their juices salt and freshly ground black pepper to taste 1/2 teaspoon sugar
1 tablespoon finely minced fresh parsley, tarragon, or basil



1 Melt the butter in a medium-size saucepan over medium heat. Add the onion and cook, stirring occasionally, until translucent, 5 to 7 minutes. Add the garlic, tomatoes, salt, pepper, and sugar. Reduce the heat and gently simmer for 25 minutes. Stir occasionally.
2 Puree the sauce with a blender or a food mill. Return it to the pan and reheat over low heat. Stir in your choice of fresh herbs just before serving.
