| 3 tablespoons unsalted butter | 1 medium onion, finely chopped | 1 clove garlic, crushed with the flat side of a knife |
| 2 pounds fresh, ripe tomatoes, coarsely chopped, or 2 cups canned plum tomatoes coarsely chopped, with their juices | salt and freshly ground black pepper to taste | 1/2 teaspoon sugar |

| 1 | Melt the butter in a medium-size saucepan over medium heat. Add the onion and cook, stirring occasionally, until translucent, 5 to 7 minutes. Add the garlic, tomatoes, salt, pepper, and sugar. Reduce the heat and gently simmer for 25 minutes. Stir occasionally. |
