INGREDIENTS:
1-1/2 pounds turnips, peeled and cut into 1-inch cubes salt to taste 3 tablespoons unsalted butter
freshly ground black pepper to taste 1/2 teaspoon ground cinnamon 2 tablespoons finely minced fresh parsley, for garnish



1 Place the turnips in a medium-size saucepan with enough cold salted water to cover. Bring to a boil, reduce the heat, and simmer, covered, until fork-tender, 12 to 15 minutes. Drain.
2 Melt the butter in a large skillet over medium heat until very hot. Add the turnips and season with salt, pepper, and cinnamon. Cook, tossing frequently, until the turnips are golden all over, about 10 minutes. Sprinkle with the parsley and serve.
